How did you transfer your old Jellyfin server to the new server?

It should be that if you copy over your config folder to the new server, you should retain all your metadata. The nfo files will only be edited to show the new path of the image files (if at all). And any entry that doesn't have metadata locked will probably have it's images and other things change if the metadata source changed them aswell.

When I transfered my server from a Synology unit to a Truenas server, I had all my metadata intact. If the nfo files were modified, it was only related to file paths to said metadata.

The location of where you chose to save nfo and other metadata doesn't matter. They should all still be read instead of refetching from the internet.
