I see that some of your files are being continuously tagged as new. And that you have image saved with your media. Are the images saved in your directories the problem? Jellyfin will always prefer local images over TMDB/TVDB/etc. images.

Solved (I hope.) I didn't spot this, but what you're seeing is a .jpeg with the same file name as the video in the source folder. I don't know how to tell Jellyfin to ignore those in future, but i've deleted them.
