Would Just be a picture from my phone showing some files I can see to show I am connected to it. I am currently playing one of the video files as we speak and cant see it in the log at all

That makes me question whether it is using DLNA or just directly accessing a SMB share or something.
Also, I noticed that you only have one folder added to Jellyfin, D:\Server. Do you have movies and shows mixed together in there?

I did but I have since changed that to have two folders, one for shows and one for films.
