Once the release is visible on GitHub we start the publishing part which often takes a few days for the stores to approve and then me gradually increasing rollout and watching for any major issues. Most patch releases (where only the last digit changes) get a full rollout, 0.18.3 was a "special" one that I explicitly postponed until after new year so no new major issues would arise for people using Jellyfin during their new years festivities.

I did start on documentation about our release process some time ago but never finished it. To be frank, I'd rather spend my time working on the actual app instead of all the administration around it. The important part for the average user is just to "just wait". It's not like you know the release processes etc of the YouTube app etc. We're already way more open about all of it: releases are available on GitHub, I'm writing blog posts about the bigger ones, the complete build process is open-source and I occasionally share status updates on my Mastodon (https://mastodon.social/@hetisniels) and our Android development chat room (https://matrix.to/#/#jellyfin-dev-android:matrix.org).
