It never showed any IP.
It literally only says:
* Could not resolve host: Jellyfin.xxx.xxx
* Closing Connection
curl: (6) Could not resolve host: jellyfin.xxx.xxx

What is your DNS setup on your home network?

Standard ISP DNS, no pi-hole or anything.
Probably not very helpful! sorry!
EDIT: I think Tailscale maybe set to handle the DNS queries

That would definitely explain things if Tailscale was intercepting DNS requests.

So disable the tailscale DNS and it should work?
tried your curl -vvv thing...same result..
