If you installed as an admin it is in the ProgramData folder. Otherwise I think it is in your user appdata directory? I don't recall where exactly it is. C:\Users/<yourUsername>\AppData\Local?

You're a wizard! Found it in AppData.
Dumb question, on the new machine, should I install Jellyfin and then overwrite the AppData there with that from the original machine?

Install Jellyfin on the new machine, stop Jellyfin, overwrite the AppData folder, then start Jellyfin.
