Could be your folder structure, that file path looks too long.
X:\TV Shows\Hoffman Family Gold\Hoffman.Family.Gold.S01.1080p.AMZN.WEB-DL.DDP2.0.H.264-NTb\Hoffman.Family.Gold.S01E01.The.Toddfather.Returns.1080p.AMZN.WEB-DL.DDP2.0.H.264-NTb.mkv
Try this instead:
X:\TV Shows\Hoffman Family Gold\Season 01\files in this folder.mkv

I think your onto something here with folder structure. Some of these episodes are not put into proper TV Show\Season structure like the rest as they are not complete seasons yet. I normally have everything organized in proper season folders once a season is complete but they go to the root folder of the TV Show until then. This works fine for the most part but not with these particular episodes for some reason. I'm not sure why these specific episodes are being fussy but moving them to a labelled season folder is allowing them to be played now. Very bizarre.
