Great work, and thanks!  I need to check more often though, as I have still been using 10.10.1 windows version till now.  
It feels a shame, Jellyfin doesn't have an autoupdate or at least some sort of alarm feature.

Also, anyone have thoughts on the release candidate versions?  Are they safe to use? still too unstable?

I haven't recommended upgrading to the RC versions before. But the current Master is pretty stable, so when RC6 is released, I wouldn't have any qualms about it. RC6 should hopefully be released by next week.

Where would one find these RCs? And any discussion/information about what has been worked on?

You use the IP address of the host running the reverse proxy.

I am running a Cloudflare tunnel, do I put the ip address of the domain the tunnel is using?

I have been waiting for that release since a year so the subs can finally be fixed.  Hopefully for next month.
