I think it may trace back to the removal of LibVLC as a video playback engine, but is there a way to get them to work, or do I just not use them for now?
You need to enable transcoding so that they can be burned into the video.
They don't work with direct playing because the ATV player (Exoplayer) doesn't support PGS subs directly.

This not true, PGS subs are supported by exoplayer, see https://github.com/jellyfin/jellyfin-androidtv/pull/2690

Thanks for the correction.

Yes, but why do they not work for the 'Forced' version of them? The standard PGS subtitles, those with all conversations, signs and songs, work fine. But when I attempt to load in only the "Songs & Signs" subtitle track I get "Unable to load Subtitle" error. It seems to happen mostly on items from a Funimation release. For I was able to have them work on a Demonslayer Episode (Mind you, idk if there are actually anything encoded for that particular episode) which is an Aniplex of America release. I tried this on 3 episodes. (Demonslayer ep 8, Fullmetal Alchemist Brotherhood Ep 2, and Bungo Stray Dogs ep 2). All are direct playing according to my dashboard, but the "Songs & Signs" Subtitle track (Which is labeled 'Forced, and Default' for all 3 episodes) would not play at all on Brotherhood and Bungo. However, when playing Demonslayer, when the Title card appeared, so did the Subtitle translation for it. Im attaching the most recent log file, idk if it will help, but maybe it will show why. Thanks so much for all the help though! This has been really informative on my end.

You should start a new thread with your issue.

That was only supported by libVLC, which was removed.  If exoplayer supports it that capabilities, it isn't implemented in our app.

Am I insane or was there an ability to change the "player", I think, from libVLC to a few different options in the Android TV app in a previous version?  I was looking for it a few nights ago and I can't locate it, but that doesn't surprise me...I might just be going bonkers.  Was something removed?  And if so, why?  (just being nosy)

Well it clearly was working good enough for some people (me included). Unfortunately you will never hear about a feature worked well before you remove it... So it's usually a bad a idea to see only the issue side.

I also think wasn't a great idea to remove libvlc, looking at the commit it removed a total for ~1100 lines of code. Total code is 65906 lines.

But I can relate that having to maintain the libvlc interface while rewriting the playback code is a drag that the devs didn't feel worth their time.

The straw that broke the camel's back in this case was that LibVLC went unmaintained for 2 years which means that it has some unpatched security issues.
