As title says:
Under Playback > Transcoding, when changing hardware encoding from
none to NVENC :I noticed that the defaults (already checked) include
HEVC 10-bit but not just HEVC as display on the screenshot below.HEVC 10bit HEVC HEVC 10bit10bitHEVC 10bitIs there any reason why

I'm a stickler for defaults and minimalism unless an official recommendation suggests otherwise. This always minimises troubleshooting and future issues.

My understanding is that the default settings don't mean much.
You need to consult with Nvidia's developer page and enable the decode/encode codecs that your GPU supports.
