Does anyone know how to add a sub menu, for genre or collection selection image attached for example.

There's isn't a built in feature in Jellyfin to do that as far as I know. You can click on the 'Genre" tab from your image to filter out movies based on the genre, or you can click on that 4 beside "AZ" icon to filter movies based on various tags.
