Hey there. 

Me and a friend of mine is sharing the cost for a dedicated server. 

The hardware we got for quite the good price at the datacenter was:

64 gigs of ram
i7 7700
1 gbit/s connection.

First and foremost we will stream for the closest family, but some friends have been asking for invites and we were wondering how many concurrent users we could even have? 10? 

We are aiming for mostly 1080p material.

10 direct play streams? A potato could handle that. But you should be planning for a worst case scenario where all ten are transcoding. And I'm not sure the 7700 is up to the task. For comparison, before I added an Arc GPU my much newer i3-12100 could handle twelve 1080P transcodes (without tone mapping).

What you could do is pre-transcode all your media to the following parameters for maximum direct play compatibility.

Video - H264 main 8-bit SDR
Audio - Stereo AAC
Subs - Either burned in or external SRT
Container - MP4

Just about every device will support these parameters without needing to transcode.
