Can we have a global lock for "Lock this item to prevent future changes" ?
It currently is available on a movie level but not on a global/system-wide level. I have a few thousand movies that I have edited descriptions, etc. Can we get a setting to have everything locked from changes instead of just having it on a movie by movie level?

There KIND OF is a library level way to prevent automatic changes to metadata, though it will not prevent manual changes to metadata.
Go to Dashboard > Library > Select a library. I don't have my Jellyfin in front of me, but there is a setting for how often the metadata is refresh. If you set this to "Never" that should prevent changes from automatic processes.
