Recently upgraded the server to the latest and can no longer see any options to change the default player. Has this moved/been removed or something I’m forgetting server side that needs enabling. Can still see the options on the firestick but not on the phone. Thanks.

It's always been in Settings > Client settings on my phone. I haven't checked since 2.6.2 was released (don't have access to my phone at the moment), but the changelog for 2.6.2 does not mention removing that setting.

If you're referring to the Android TV app, LibVLC was removed due to many reasons leaving on Exoplayer as the only/current player.
