Jellyfin server collects an immense amount of metadata for content, but sadly most of it can't be used via the clients for some reason.

Tags, studios, and parental rating are just a few that come to mind.  In the client you can sort by a few things but filters are only available for view state, you can't apply a filter to only show G-PG movies for instance, nor can you click on Toy Story then see that it's a Pixar movie, let alone click on Pixar to see all other films in the collection as you can with People.

What good is having access to so much rich and useful metadata if it isn't being surfaced to users in the client?

What client are you referring to? The web UI does show you some of what you described like shows showing what studio made it (and you being able to click on the studio name to bring all other things by them on your server).

The Web UI seems to be the only place it's used. Every other client, including Android TV, should give users some way to use this data.
