I'm trying to get OK K.O. on my Jellyfin server, and the show is notorious for having the wrong episode order on the air date and streaming platforms other than (formerly) HBO Max. Is there a way to automatically get the correct episode order that HBO Max used, or do I have to manually fix it?

Depends on the metadata provider you're using. If it's tvdb, check if the dvd order matches hbo max. You can check from their website.
If it does you can go to your series on jellyfin and press the 3 dot thingy on the series and edit metadata then scroll down and choose the episode order as dvd order

Nothing happens, it's still all incorrectly labeled.

After changing display order you need to do a refresh and replace metadata
