I have some videos that have an embedded thumbnail, that used to be displayed by Jellyfin.
But now they there is no thumbnail, what's the issue? (I'm not sure what updated version caused this)

For one of these videos, rescan and select "find missing metadata" and check replace images.

Nothing relevant in logs..
Library is "Mixed Movies and Shows" and its only using Embedded Image Extractor. Found this https://github.com/jellyfin/jellyfin/issues/8440 and can confirm that downgrading to 10.8.10 "fixes" the issue (embedded thumbnails are shown)

Submit a new issue, state that there is a regression, link the original issue. Then track that ticket. PRs that fix the issue will be linked to your ticket. I don't see an open issue for this problem.
