    Jellyfin overwriting metadata?

If I change metadata, Jellyfin changes it back

Hey, brand new to the forum - I've tried to do some searching but I couldn't find anything, so excuse me if I've violated forum etiquette.

Jellyfin is doing a pretty great job of scraping data, especially if I make sure the filenames are up to snuff including tvdb and youtube metadata plugins.  But if it misses anything, I cannot add or change it.  Jellyfin just keeps rewriting the metadata to whatever it was before.  I have some youtube shows that I'd like the seasons to be named something specific instead of "Season 1" or "Season 2020", I can change the name on the Jellyfin server, and it will change back to "Season 1" in just a couple minutes.  If I change the nfo file, Jellyfin just overwrites it.  If I "lock" the metadata, Jellyfin unlocks it.  If I edit the nfo to be <lockdata>true, Jellyfin unlocks it.  For a while I thought it was only if I manually refreshed metadata, but no, it does it no matter what I do after a couple minutes.

I'm thoroughly confused.  How can I edit metadata and have it stick?

One thing you can do is make the NFOs read only for the jellyfin user.
    Jellyfin 10.10.7 (Docker)
    Ubuntu 24.04.2 LTS w/HWE
    Intel i3 12100
    Intel Arc A380
    OS drive - SK Hynix P41 1TB
    Storage
4x WD Red Pro 6TB CMR in RAIDZ1
