There KIND OF is a library level way to prevent automatic changes to metadata, though it will not prevent manual changes to metadata.
Go to Dashboard > Library > Select a library. I don't have my Jellyfin in front of me, but there is a setting for how often the metadata is refresh. If you set this to "Never" that should prevent changes from automatic processes.
