I've done the steps, putting - in between the ep title and the name of the version and its still showing up as different episodes. I'm not sure if its due to the files being mp4 or or not.

Jellyfin does not currently "merge" versions of shows like it does for movies.

It says it was added in v10.8.10. And its in the github.

Correct. Previously it would have only listed one of the two files for an episode. Now it shows both. Not ideal. I also had the same misconception that it would behave like it does for movies, but what you are seeing is the expected behavior.
