I have been useing my iPhone for jellyfin for awhile and just got a Nvidia Shield and put jellyfin on it. On jellyfin mobile for iPhone you can add multiple servers.  I don’t see that option in jellyfin for android tv.  Could someone explain how to do this?
Or do I have to delete server and install each time I want to switch?

I'll do some testing when I get home, but I'm pretty sure you can have multiple servers. Not sure its as graceful as the jellyfin-web based clients.

Click on the person icon. On the next screen, you'll see your username, an option to add an account, and your current server. Click on your current server, and you'll see a list of auto-discovered servers, or you can manually enter the address.

I use a Fire TV and run multiple servers without any crashes when switching between them. The only suggestion would be to delete and reinstall the app.

Are the servers running different versions of Jellyfin? I just tried connecting to both my stable (10.9.11) and unstable (10.10) servers and didn't have any issues. Tried on both my CCwGTV 4K and Google TV Streamer.
