In the Jellyfin UI, can you go click on "..." then Edit Metadata for a show or movie and verify that the TMDB IDs are actually getting stored in Jellyfin?
Also, can you open a browser dev console and let us know what you see when you attempt to pull images? I just tested on mine and I see no logs for a successful "edit images" search. So I'm wondering if an unsuccessful search is even logged.

Images show just fine, it's just showing season posters for seasons I don't have. For example here's what the page for Seinfeld looks like: I only have Season 1 on my server, so that's the only one I would like to see. This was the behavior on the old server. Here's the folder structure: The other season0x-poster.jpg files got added after scanning the new library on the server.

Does tvshow.nfo contain information for all the other seasons? Or just season 1? And is Jellyfin creating the NFO or is an external app creating them?
If not, I'll have to do some testing and get back to you.

Jellyfin is the only thing creating/modifying the NFOs And for clarification, this isn't the only show doing this. It seems like most of them are.

Another detail, those seasons don't show up when browsing the library on Kodi via Jellyfin for Kodi.

I've done a bunch of testing in my test instance. Enabled NFOs (I don't use them normally) and it does indeed pull down all the season posters.
But only the actual season present is in Jellyfin. At any point, even prior to your migration, did you have more content for the affected shows? More than just season 1 for Seinfeld? Or have you never had the seasons that are listed in all your shows? Do you have the missing episode setting enabled? What happens when you click on "..." for Seinfeld, Refresh Metadata, replace all metadata, replace all images?

I don't think I've ever had the missing episode setting enabled, but trying to double check I can't seem to find it. Is it not under Libraries > Manage Library? Doing this removes all the extra seasons. I tested some other shows, and I could get the extra seasons to disappear just by doing this on the season itself to avoid messing up my current custom images/metadata. ("Replace all metadata" is unnecessary, "search for missing metadata" without checking replace all images did the trick) But whenever I run a full library scan, all those seasons just come back.

I was able to recreate this issue. In the library if I enable "Missing Episode Fetcher", then all dummy seasons are created. On a new library, the initial scan only created one season, but on a rescan with replace all metadata the dummy seasons were created. Didn't matter if nfo files were there or not.
To fix it I had to delete the library and then readd the library, making sure the "Missing Episode Fetcher" was not selected. A scan of the of the library with replace all metadata did nothing, i had to remove and readd the library to get rid of the dummy seasons.

After removing are re-adding the libraries they're gone and don't come back after a rescan. I don't know how I overlooked that, tbf it's been awhile since I've last setup these libraries (which was when Jellyfin was first forked from emby). Thanks guys for all the help!
