I want to add "X-Men TAS" to my jellyfin collection but none of the episode groups on TMDB fit my desired sorting. Is there a way to group the episodes arbitrarily?

Yes. Jellyfin lets you overwrite all the metadata manually. You can go to each episode and give it your desired season and episode number. You can also sort seasons by giving them different names too.

Just make sure to lock the metadata so you don't lose your changes on a future library scan.

    How do I do that?

On the edit metadata popup, scroll all the way to the bottom. There should be a checkbox to lock all (or some) of the metadata.

Keep in mind that this lock feature will only lock the metadata fields that are full. If any field is left empty, that will be refilled on a future scan if the metadata source has the info.

Also, you don't have to lock each episode one by one. Locking the metadata will lock all items under it. So locking a season will lock all its episodes. Locking a series will lock all its seasons and episodes. Etc.

Just make sure to reapply the lock if you change the series' name by unlocking and relocking it. A name change will cause the lock to not apply to new added media. If I remember right, adding a new season to a series will still retain the lock and apply to the new added season since the series name was not changed.

TMDB and TVDB both have alternate orderings.

In Jellyfin you can select from a limited selection of generic options for display order.  As long as your file names match with the desired ordering Jellyfin will apply metadata accordingly.  I have the X-Men DVD boxsets and use the DVD ordering.
