SOLVED: Disable Close Captions (CC)

Arghhh! I am frustrated over these captions. I run the Jellyfin server and host shows inside my own home. I have 2 Roku sticks  and 1 FireTV; all running the Jellyfin app.

I have all episodes of Supernatural and all have soft CC enabled.
I have all episodes of Breaking Bad and are both in French and have soft CC enabled.

Can all my Jellyfin's playback be forced to choose English as the default language?
Can all the CC subtitles be forced OFF by default?
Would this be done at the server end or at the TV client end?

I know how to re-encode my shows to force both things, but there must be a software method of doing this. I would be glad to share some sample shows or further words of wisdom if anyone has more private thoughts on the matter. It gets frustrating to repeat this each time the episode changes. Phooey on that.

Each client handles audio and subtitle language selection differently, unfortunately. So there is no one answer. Some will provide a preference you can set that will ignore track dispositions, some will strictly honor "forced" or "default" dispositions, regardless of preference. Some don't have a preference at all.

Personally, I setup automated post processing that remuxes the tracks, removes undesired audio/subtitle languages, reorders the tracks so that english is always the first, and removes any forced/default dispositions.

I was afraid of that. Phooey, I guess I will remux them then (you just taught me that term). I have an Nvidia 1050ti GPU which supports hardware HEVC encoding, so that speeds things up a bit. Each season is about 25 episodes, so I can queue 3 seasons nightly until they are done. Thank you.

When you remux you do NOT have to re-encode anything.  You can simply copy the existing video, audio, and subtitles without modifying them.  You can simply select out the languages you want and discard the rest.  This will be much faster than re-encoding, which does require more compute power.  With simple remuxing (no re-encoding) the limiting factor is how fast your hard drives are.
