Is there a way to generate .nfo files for episodes I don't have? There must be a better way then manually copying from TMDB.

Not with Jellyfin. I'm also not aware of a tool to automate that since the automation tools rely on files present to determine what to get.
    Jellyfin 10.10.7 (Docker)
    Ubuntu 24.04.2 LTS w/HWE
    Intel i3 12100
    Intel Arc A380
    OS drive - SK Hynix P41 1TB
    Storage
4x WD Red Pro 6TB CMR in RAIDZ1

There is a hacky way to do this. Jellyfin doesn't actually check if a video file is exactly what it's named as. It only picks up the name of the file. As in, if you name any random small video file as something it's not, Jellyfin will be non the wiser. So if you make a 1MB video of a blank wall and name it "Spider-man", Jellyfin will believe that it's the Spider-man movie and will pull the metadata for it.

So what you can do is get a small video file, copy and paste it as many times as you need, then name each file as the episode(s) or movie(s) you want to pull and create the .nfo metadata for.
You just have to add each fake video to their respective folders, scan your libraries, then copy and save all the .nfo files you generated.
Then you delete the fake videos and you're done. Just make sure you save the .nfo files before deleting the fake files so you don't lose the .nfo files.
