Is there any way to sort shows by Air Date - Next Up / Latest Shows
And for Latest Movies by Release Date

Shows can be sorted by release date if the client supports sorting, but I don't believe it's as granular as episodes. On webOS (which mirrors the web client in most aspects) if I go to a TV library, I can go to Episodes at the top and sort by Premiere Date, which provides almost exactly what you're asking for, though it's a few extra clicks/taps/navigational impulses. Same goes with Movies libraries.

Now if you're asking about "Latest" areas on the client dashboards, those are simply what has been most recently added to the media server. There's no customization of sorting as far as I know. Even modifying file dates (creation, modified, etc...) would have no effect as far as I know. Several tools out there will change the file creation date to the release date of the film or episode, which is useful in some circumstances, but doesn't help here.

For Movies yes sort by Premiere Date Descending works, but for TV Shows you needs to sort by air date.
I am sure air dates are included in most all sites scraped by Jellyfin.
Sorting by date added doesn't help much when wanting to watch latest aired series.

Premiere date is an option for me, which would date that episodes aired if you go to the correct section. It's not ideal as it's ALL episodes sorted by air date (meaning a "latest" feed of sorts) but if you enter a library and click on the episodes tab at the top, then sort by premiere date, that should provide what you want.

Is that not available for you? I'll see if I can grab screens on a few different clients...I have Roku, Android mobile, webOS, and of course...web.

EDIT: Added Android Mobile. This seems to be widely available unless I'm misunderstanding what you're looking for...
