Not sure if this is a bug or intentional but I have these playlists that I've enabled public access. I changed the image but it doesn't show in the other users' profiles like Collections does:

That's a known issue: https://github.com/jellyfin/jellyfin/issues/16032
There is a PR in the works to fix it.
