I have an episode of Late Show with David Letterman. It's the last Xmas performance on the show by Darlene Love. According to the tvdb and themoviedb, it's season 22 episode 61, but IMDb has it as season 22 episode 69.

So the metadata has mixed from both sources. The episode title is "Jay Thomas, Josh Brolin, Darlene Love" but the description is "Ben Stiller (Night at the Museum: Secret of the Tomb (2014)); Olivia Munn (The Newsroom (2012)). Also: LaLa Brooks performs"

Which tv source is usually considered more accurate for episode numbering? Should I drop IMDb from the tv library?

Jellyfin does not use IMDB for metadata, period. They do not have a consumer level API. In fact, using IMDB IDs relies on TMDB having a IMDB to TMDB mapping for the IMDB ID.

One thing I noticed with both TVDB and TMDB is that neither has a description for that episode. For most episodes, it looks like.

Do you have any other metadata providers? OMDB doesn't have a web UI to look at. Could it be grabbing descriptions from OMDB?

Yes, OMDB is the last grabber in my order.

Out of curiosity though, why does IMDb get listed as a source on the episode's page? Is that a mislabel of omdb?

At the bottom of the episode, above genres, it says "IMDb, TheTVDB"

It isn't a source, its just a link to their web page for whatever you are looking at. TMDB, IIRC, maps their IDs to IMDB IDs and Jellyfin uses that to generate that IMDB link.
