Quick google search says it can be done, but it's going to take me a while to figure out how

I got the official image up and running and still had the same issues. After banging my head against a wall I finally figured it was user error. It's embarrassing, but I never had the HEVC option checked, and every video I was trying to transcode was HEVC.
