hey
is there a way for jellyfin to display how many hours of available watchtime my movie and show libraries have?
(so, not how much time i have watched...but how much in total is available)

You can use the Reports plugin, which can filter by unwatched. You can then export the results to CSV/XLS and use excel or google sheets to sum up the video length column.
I am not aware of a tool that does SPECIFICALLY what you're asking.
