When I have all the TVDB unticked in the library settings, I still get it showing up in the metadata. Is there something I'm doing wrong?

That's a known issue, that certain info is still gathered from unselected metadata providers.

Thanks, is there any way to remove it and do a rescan so it doesn't pick it up on the rescan?

Don't know. You can try to remove it and then lock the metadata for that item, to prevent changes when scanning.
