Will this NUC be good enough?

I'm new to all of this but really interested. Will qn intel i5 7th Gen  8GB RAM 256GB NUC be good enough for at max 3 streams concurrently, using Jellyfin? I plan on running Ubuntu and setting up that way.
I also plan on getting an external drive just to test the waters before thinking of adding a NAS or anything.

Any advice appreciated and when should you not use MKV as the file format?

As long as your content isn't HDR, 3 concurrent streams should not be a problem for that NUC. File format shouldn't matter.
