Jellyfin can't find my linux folder

I am extremely new to linux I started yesterday. I cannot for the life of me work out how this stupid stuff is meant to work. Jellyfin is downloaded and I am at the folder creation stage. I make a movie folder on the website, and it asks for a directory. I go make a folder  in my 1TB second hard drive and title it "Movies" (for movies). Jellyfin can't find it. Apparently it's to do with permissions. I try to fix the permissions, nothing. Then I try to change permissions in the command prompt and it says i dont have permission (despite everywhere online telling me it works), i try to make new folders in the prompt and again no permission. SO I have 3 issues, 1 jellyfin can't find a simple folder in /media/server1 , 2 I can't make new folders under any other directory (e.g /dbd) and 3. I can't change permissions.

I'm stumped what on earth do I do

Windows > Linux all the way is all i can figure out.

You need to mount a hard drive in Linux, but first you should check if it exists (fdisk -l).

It is already mounted and it exists as /media/server1/d03d4178-3081-451a-a979-547f04753428 yet nothing not even I have permission to access it

Okay I did https://www.wikihow.com/Linux-How-to-Mount-Drive and it did work but then I rebooted the machine, and then all the progress in making that directory had wiped and the old mountpoint of /media/server1/d03d4178-3081-451a-a979-547f04753428 comes back...

Hey so I've just done that and tried to permanently mount the drive and now the computer doesn't want to boot so now I have a broken computer. I did everything exactly as shown (I found that guide confusing)

I think it is not broken. May be fstab was modified by you with some errors. You must only add some new string(s) regarding your mounted hdd. Do not touch first existing strings.

I only made a new line in fstab and now Ubuntu doesn't want to work.
I use an i3-3220, 1TB HDD and 256GB SSD
I think I am going to revert to Windows. Ubuntu is not very good. I used it because a lot of people online would say it was good for beginners and etc. I don't think it is in my opinion. I know computers well but this is just another level..
