My advice is to use OpenMediaVault (Debian 12)
Very simply to install and operate.
Also it will help to study linux

What would be the benefit of using Linux over Windows for Jellyfin specifically

Linux is generally more stable and won't force you to update your OS every month unlike Windows Home versions.

If you want to use Docker too, Docker works better on Linux.

Server variants of Linux are designed for maximizing uptime, which is what you want if you are running a service like Jellyfin.  A lot of updates in Linux don't require restarting the OS, Linux doesn't force you to restart by default after X interval after updates are installed, there are no sleep/power saving functions, and Linux produces A LOT more useful logs for troubleshooting.

It is a huge learning curve, even on more user friendly distros, but the control you gain is worth it.
