The only other suggestion is check if Metal is installed.
https://jellyfin.org/docs/general/admini...ion/apple/ Not sure if that is strictly necessary or not. Not sure what else to suggest beyond this. I am at my limit regarding this topic since I don't have any Macs. But it may just be that Apple Videotoolbox no longer supports your GPU.

I may use a different computer. I have an old 7th Gen i5, and an AMD R5 low profile card. Or I can Handbrake everything and remove AVI's.

The 7th gen Intel i5 would be what I'd choose of the available options.
