I am having the same issue... I have all MP3 Tag info populated via Picard. I also have all my songs in one folder rather than separated into album/artist/track subfolders. Documentation states that this is acceptable.
I have tried via the web interface and the Firestick 4K and on my Android phone.
In the web interface and Android phone, Albums does not populate at all. Genre populates, but when I select a genre, no tracks are listed. However, in both cases, if I hit Play All, it DOES play music and displays the album art on the currently playing track.
On the Firestick 4k Neither Albums nor Genres populates. There's no Play All button shown on the app.
When playing a song via the Artists or Album Artits tab, it shows album art and the album name, so the tags are clearly being read properly.
This appears to be primarily a Server issue.
