i can tell you jellyfin is based on emby and they handle the same number of files
and plex is corporate garbage so good luck there
Tried out Plex and it works well but as you say it is very corporate and has seen some dodgy privacy issues lately, but it does work.
Tried out Emby also and it works very well with no issues at all with large albums, so it seems that at least it doesn't have the same bugs as Jellyfin, even though it's a fork.
But I really like Jellyfin, it's almost perfect for my needs. I tried some workaround kludges by splitting the large albums down and it seems to work, although it doesn't look very pretty.
