First off... while I at least have the ability to cast to Chromecast devices, unless something has changed in the past few weeks (while I've been too busy to follow the new forum for updates) Chromecasting is janky at best with Jellyfin. For example with my similar-to-you setup, I can usually start the cast but then I almost immediately lose control of it from my device and it just plays through on the target Chromecast. I would not rely on it. Cheap Android TV dongles work well most of the time with the installed Jellyfin app.
I'm dumb and cannot read log files, but the first thing I would do to troubleshoot... The nginx config in the docs is not necessarily for Nginx Proxy Manager, which is a pre-configured Nginx that already does a lot of that for you. You shouldn't have to do anything outside of what is available in the Nginx Proxy Manager webUI to get it to work just fine. I would throw out that entire config and set up a new proxy site in NPM via its webUI. Personally, I check everything on the Details tab, and then request or upload your jellyfin.example.com cert and check everything on the SSL page as well.
