If you aren't familiar with Linux, Windows is fine. Docker in Windows is jank and is not recommended for beginners. Lots of weird things you have to do to make hardware acceleration work, etc.
Either go Linux or just install Jellyfin directly on Windows and turn off all the sleep/update functions.
