Documentaries are just like any other movie or tv series and the metadata is pulled just like other types of genres. Of course, sometimes there isn't metadata at imdb or tvdb, etc, or you have to manually search or even edit the metadata to create and input it yourself.
I've never had too much of an issue with documentaries. Sometimes, like for PBS specials that I have recorded, there really isn't metadata sources so I take the basic nfo that my recorder created from the guide and expand upon that. Then, as a side hobby, I will then go and create the show or movie at tmdb, tvdb, etc so others can eventually pull it if they need it from sources.
