Did you select NVENC in the Jellyfin dashboard? I'm not sure Jellyfin would be trying to access the GPU. Heck, I don't even see Jellyfin in my kern.log at all. Also, it shouldn't be filling up your disk. It should be rolling over the log after a certain size, unless that is broken.
