Only transcoded media will play

Hello everyone,

as expected in this forum, I am having problems with my jellyfin server.

Installation method: Via repository and apt
OS: ZorinOS 16 (also tried 17, which are basically Ubuntu) Virtual Machine on Proxmox (also tried 17, which are basically Ubuntu)
It has 4 cores (from a 2400G) and 8GB RAM
Server-Version: 10.8.13 (also tried the newest available one, just reverted to a backup I made before upgrading)
GPU: passed through a GTX1060 6GB (Nvidia-smi also shows that transcoding is happening with working movies)
Storage: TrueNAS VM running on the same server, which is connected via nfs to the jellyfin vm
Clients I am using: Jellyfin Player app on a FireTV Cube, Jellyfin media player (Linux) and I am also trying it via the browser

Problem:
Some movies will play without problem, transcode fine and just work on all my clients.
Then I have some movies and shows, that just won't work at all. These just keep "loading" and the circle keeps spinning and nothing happens else (even left it for 60 minutes trying to load on another occasion).
I've looked at the logs (there are no ffmpeg logs, since these won't even start transcoding) and can't see anything wrong there.
