What errors are we talking about? ffmpeg will always use 100% of the resources it is given (one thread in this case). So what you described in your opening post is normal.
Since you have plenty of cores available this shouldn't cause any responsiveness problems.
As for whether to disable trickplay and chapter image extraction, that's a personal preference. Most people let the job run in the background.
