Well you already can do this. It only does not happen "Automaticly".
Just transcode your media to your desired resolutions and put them all alongside a folder in your library. You have to add destinctive marker to them so jellyfin may see them, for example
/media/movies/Star Wars/Star Wars The Phantom Menace (1999) - 4K.mkv
/media/movies/Star Wars/Star Wars The Phantom Menace (1999) - 1080p.mkv
and the UI will display that accordingly
(in my screenshot its "normal" and 60fps versions)
