What parts of the server edition would help my setup to be more successful? Are there server roles / features that I would want to install to support the JellyFin setup?
The main reason I recommended it is because the Home edition has frequent monthly updates that will most likely force the PC to restart after some time has gone by.
I would recommend Jellyfin to be installed on something Linux-based, but I have seen people be happy with the Windows server version.
