The transcoding appears to be working fine. It started transcoding and then stopped. Probably due to some issue with the client. Not sure what it could be, though. The transcode output is 1080P H264, stereo AAC, the subtitles were burned in, and it was put in a MP4 container. Super compatible.
Can you share the full jellyfin log, not ffmpeg log, via pastebin? Also what kind of clients do you have? Android TV, WebOS, etc.
Unrelated. I noticed that your Jellyfin config and cache folders are created and managed by TrueNAS. Do you know if those are persistent? As in Docker/TrueNAS won't delete them if you cleanup docker? We generally recommend that /config and /cache are mounted to a host path, like you have for your media. When done in this manner, Docker/TrueNAS do not manage it and won't delete them. And it's easier to backup and migrate.
