Can you share the full jellyfin log, not ffmpeg log, via pastebin? Also what kind of clients do you have? Android TV, WebOS, etc.
Unrelated. I noticed that your Jellyfin config and cache folders are created and managed by TrueNAS. Do you know if those are persistent? As in Docker/TrueNAS won't delete them if you cleanup docker? We generally recommend that /config and /cache are mounted to a host path, like you have for your media. When done in this manner, Docker/TrueNAS do not manage it and won't delete them. And it's easier to backup and migrate.
I'm trying it on my S24 Ultra and a Firefox on Mint 22, both having the same results.

For the unrelated points, i have no idea. TrueNAS runs Kubernetes. I think they're switching over to Docker in the October release. And you've now reached the end of my knowledge!
