sudo systemctl stop jellyfin
sudo nano /etc/jellyfin/system.xml

Near the top of the file is "IsStartupWizardComplete". Change the value from true to false. Save quit.

Code:

sudo systemctl start jellyfin

Access your jellyfin. Recreate your admin account, skip everything else.
