This entirely depends on the quality of the subs being provided by the plugin and how close your content is to matching the source the subs were made for.

2. In case of embedded subtitles, no additional subtitles are downloaded. At least as far as I understand.

Is were a way to manually download subtitles from all available in the list like you can in Kodi?

You can remove the embedded subs with a tool like MKVToolNix before adding the content to Jellyfin.
