People do run Jellyfin on SBCs. And we strongly discourage that due to their lack of hardware acceleration capability. The exception being Rockchip based SBCs. If you have full fat PCs as your clients and simple media, running Jellyfin on a RPi is fine. But if you have streaming device type clients and complex media then there is a strong chance you will need video transcoding. Except for Rockchip based SBCs, RPis and other SBCs don't have the CPU power to reliably transcode video.
When I say the N100 has better support, I mean specifically for Jellyfin. We support hardware acceleration on it out of the box. In addition to it just being super capable for video transcoding relative to its power usage.
